The cultivation culture of this vegetable is very ancient. Even in ancient Rome, artichokes were used as a side dish or as a separate dish. In southern countries, artichokes are still a very popular dish. Artichokes mainly eat green inflorescences. The most delicious is the receptacle on which the inflorescence of the basket is located. It is also called a heart.
The scientific name of this plant is Cynara scolymus L. The generic name goes back to the Greek word “κύον” – dog, by the similarity of the leaves of the wrapper with dog teeth. And the specific – from the word “σκώλος” – the point for the thorns at the ends of the leaves. The Russian name through European languages comes from the Arabic “ardi-schauki” – earthen thorn.
In Russia, artichokes appear in the Peter the Great era. According to legend, Peter I tasted artichokes in Holland. He liked them, and the gardeners of the imperial gardens were instructed to grow them. Artichokes were actively cultivated until 1917, when these vegetables became unpopular.
